Cooking Directions

1. Add 1 tablespoon of garlic paste and the cleaned trotters (hooves) to 15 cups of hot water . Boil for 10 minutes , then drain the water to remove impurities.
2. In a large pot, bring 12 cups of water to a boil. Add the cleaned trotters, half of the sliced onions , ginger, and garlic paste. Cover and cook over low heat until the trotters become tender ( 3-4 hours for goat or lamb and 6-8 hours for cow trotters ).
3. In a separate pan, heat cooking oil or ghee and fry the remaining sliced onions until golden brown . Add Shan Paya Recipe & Seasoning Mix along with yogurt and stir-fry for a few minutes until fragrant.
4. Pour the prepared spice mixture into the cooked paya curry, mix thoroughly, cover, and simmer over low heat for 30-45 minutes to allow the flavors to blend perfectly.
5. Adjust the consistency if needed and cook until the curry reaches your desired richness before serving.

Serving Suggestion: Garnish with fresh coriander, julienned ginger, sliced green chilies, fried onions, and lemon wedges. Serve hot with naan, kulcha, tandoori roti, or steamed basmati rice for an authentic South Asian dining experience.
