Cooking Directions
- Heat half of the oil or ghee in a large cooking pot. Add the meat, garlic paste, and Shan Haleem Recipe & Seasoning Mix . Stir-fry for several minutes until the meat is well coated with the spices.
- Add 15 cups of water , lentils, wheat, and bones. Cover the pot and simmer over low heat until the meat becomes tender ( approximately 4-6 hours for beef or 3-4 hours for chicken ).
- Remove the bones from the cooked haleem and discard them. Using a wooden spoon, gently mash the mixture until it reaches a coarse texture, or blend for 1-2 minutes . Avoid over-blending, as the haleem should retain some texture.
- Continue cooking over low heat for about 1 hour , stirring occasionally to prevent sticking. Add more water if needed to achieve your preferred consistency.
- In a separate pan, heat the remaining oil or ghee and fry the sliced onions until golden brown. Pour the fried onions and oil over the haleem, cover, and simmer for an additional 20-30 minutes to enhance the flavor.
Serving Suggestion: Garnish generously with crispy fried onions, julienned ginger, fresh coriander, green chilies, lemon wedges, and a drizzle of ghee. Serve hot with naan, chapati, or tandoori bread for an authentic South Asian dining experience.
