Cooking Directions

1. Heat ½ cup of cooking oil in a large pot. Add the meat and Shan Nihari Recipe & Seasoning Mix , then stir-fry until the oil begins to separate from the masala.
2. Add 18 cups (3½ liters) of water along with the bones. Stir well, bring to a boil, then cover and cook over low heat without disturbing the pot until the meat becomes tender ( approximately 6 hours for beef, 4 hours for goat or lamb, and 3 hours for chicken ).
3. Remove the bones, collect the marrow, and discard the bones. Return the marrow to the gravy for added richness and authentic flavor.
4. Gradually stir in the dissolved flour mixture while continuously mixing to prevent lumps. Bring the gravy to a boil and cook for 15 minutes , stirring occasionally until it thickens.
5. In a separate pan, heat the remaining oil and fry the sliced onions until golden brown . Pour the fried onions and oil over the Nihari, cover, and simmer over low heat for an additional 10 minutes .

Serving Suggestion: If desired, remove excess oil before serving. Garnish with julienned ginger, fresh coriander, sliced green chilies, lemon wedges, and fried onions. Serve hot with naan, kulcha, or tandoori roti for an authentic restaurant-style Nihari experience.
