Cooking Directions
- Heat cooking oil in a large pot and fry the sliced onions until golden brown . Add chopped tomatoes and cook until the oil begins to separate from the masala.
- Add your preferred meat, garlic paste, ginger paste, yogurt, potatoes, and the entire packet of Shan Bombay Biryani Recipe & Seasoning Mix . Stir-fry for about 10 minutes . Add water ( 4 cups for beef or lamb and 2 cups for chicken ), cover, and cook over low heat until the meat is tender. Increase the heat and cook until the oil separates from the gravy.
- In a separate pot, bring 15 cups (3 liters) of water to a boil. Add 2-3 tablespoons of salt and the soaked basmati rice. Cook until the rice is about three-quarters done , then drain thoroughly.
- Spread half of the partially cooked rice into a large cooking pot. Pour the prepared meat and potato curry evenly over the rice, then cover with the remaining rice.
- Cover the pot tightly and cook over low heat for 5-10 minutes until the rice is fully cooked and infused with the flavors of the meat and spices.
- Gently fluff and mix the biryani before serving to evenly distribute the meat, potatoes, and rice.
Serving Suggestion: Garnish with crispy fried onions, fresh coriander, mint leaves, lemon wedges, and sliced green chilies. Serve hot with cucumber raita, fresh salad, pickles, or mint chutney for a complete Bombay-style biryani experience.
